Cupcakes!

Just a quick recipe to keep you entertained while I'm in Dubai...
You may have noticed that I'm not a super-cook, in fact, up to 4 years ago I hadn't even fried an egg in my life but things change and I find every day more and more happiness in my kitchen trying to cook new things. This time it was cupcakes' turn! 
Cupcakes are one of those girly foods, after Sex & the City they have become the symbol of the good times with friends after shopping and gossip and after having tasted the delicious ones from Magnolia Bakery, Agnes Cupcakes and Hummingbird Bakery, I had very low expectations on my cupcakes but I still gave it a try. The first recipe I tried was not very good so I used this other one with slight variations on the quantities and the frosting. It was actually not difficult to make (the mess in the kitchen was difficult to clean, though) and the results were worth it!



Vanilla Cupcakes 

(makes 12)



For the dough:
80 gr of butter at room temperature
280 gr of sugar  (softened) 
240 gr of flour

1 tablespoon of baking powder
1/2 teaspoon of salt
240 ml of whole milk
1 teaspoon of vanilla extract
2 large eggs


Pre-heat the oven to 190°. Mix the butter, sugar, flour, baking powder and salt with the electric whisk 
at low speed until all ingredients are well blended.
In another bowl mix the milk, eggs and vanilla extract. Add 3/4 of the liquid ingredients to the dry ingredients, and blend well using the electric whisk. Once all ingredients are well mixed, add the rest of the liquid ingredients, and mix everything well until the dough is soft.Prepare the muffin baking tray, placing inside the cupcake cups made of baking paper. Fill them for 2/3 with the mixture. Let them cook in the oven for about 20 minutes or until the cupcake becomes elastic and soft to touch.Remove from the oven and let it cool in before letting them cool completely on a wire rack.

For the Frosting:

300 gr of icing sugar,
80 gr of butter (softened)
240 gr of philadelphia (or other cream cheese)
1 teaspoon of vanilla extract
food colorings and sprinkles for decoration (optional)


Prepare the frosting by mixing 
the butter and sugar with the electric whisk at low speed. Add the cream cheese and continue to stir until the glaze has reached a sandy texture. Then add the vanilla extract, increase speed and continue mixing until the frosting becomes soft.
Add the colorings in small amounts. 
Wait until the cupcakes are completely cooled before decorating them with the frosting and the sprinkles.
