Best food in Las Vegas

Las Vegas is not only the world capital of gambling and entertainment, it is now one of the best cities in the US for good food.
During my trip, I had the chance to visit some of these restaurants, but only the following 3 made it to my list of the top 3 places to eat in Las Vegas:

3rd: I [heart] burgers - Palazzo
Forget Stripburger or all those burger places overlooking the Strip, this cool burger place, hidden in a corner of the Palazzo shops has excellent burgers, not very cheap but of excellent quality. Like the "Dante", made of delicious Angus beef, blue cheese, caramelized onions and roasted garlic alioli; super tasty! And the fact that they had 2-for-1 cocktails was also appreciated.
There's another restaurant at the Town Square mall in the southern side of the Strip.

2nd: The Wicked Spoon - Cosmopolitan
I think this one might be my favorite buffet in the world, maybe because you can find here food from all over the world (and good food, actually): carnitas, tacos, ceviche, chinese noodles, curry, cheeses, sushi, etc.; or maybe because portions are already served in cute plates/baskets/boxes; or because its deserts bar (including gelato station) is; or because it has the most delicious cheesecake I've ever had; or maybe all of them together. The only downside is the service, not a big deal since it's a buffet, but still, it could get better and reach perfection.

But the number one place (which I actually visited twice) is....

creating suspense...

1st: Tacos El Gordo - Las Vegas Blvd, near Encore
OK, it's not Nobu, no Gordon Ramsay behind the kitchen doors and no fancy plates or tablecloths but this was the only place I visited twice during my stay (and wish I had visited more). Nothing fancy, no high-heeled models around or celebrities, just Mexican families, bikers, normal people enjoying true Mexican tacos: delicious, greasy, spicy. And at $2 each, best value in Vegas!
